Here's a vibrant raw vegan carrot and seed salad packed with skin-loving nutrients that work in harmony with your topical routine.

Why this salad is a skin superfood

The Recipe

Ingredients:

  • 4 large organic carrots, grated or julienned
  • 2 tbsp pumpkin seeds 
  • 2 tbsp sunflower seeds
  • 1 tbsp hemp seeds
  • 1 tbsp sesame seeds
  • Handful of fresh coriander or parsley, chopped
  • Juice of 1 lemon
  • 2 tbsp cold-pressed olive oil or flaxseed oil
  • 1 tsp raw honey or maple syrup (optional)
  • Pinch of sea salt and black pepper

Method:

  1. Grate or julienne the carrots into a large bowl—the finer the cut, the better the dressing absorbs.
  2. Toast the pumpkin and sunflower seeds lightly in a dry pan for extra flavour (optional, but delicious).
  3. Add all seeds, fresh herbs, lemon juice, oil, and seasoning to the carrots.
  4. Toss everything together and let it sit for 10 minutes to allow the flavours to mesh together.
  5. Serve immediately or store in the fridge for up to 2 days.
